Pulled Pork Adobo Loko Sliders

Here’s a pulled pork version of adobo with similarities to lechon paksiw, a sweet and sour stew made from leftover roast pig, and humba, a sweet meat stew. I recommend garnishing this dish with a green papaya and carrot pickle known as atchara, which needs to be started at least 5 days ahead of time.
