Jon Favreau’s character in Chef had a meltdown over molten choclate lava cakes, but I swear making them doesn’t have to be a stressful experience! As long as you don’t overbake them, you’ll be able to achieve those ooey- gooey centers. Classic ube macapuno cake— with its layers of ube chiffon, buttercream, and sweet coconut sport strings— is near and dear to my heart. Seeing any variation of this cake takes me back to being five years old, and gazing longingly at it in the window of our local Goldilocks. There were so many desserts at this Filipino bakery chain that I wanted to take home with me, but I just adored this cake so much.
