Our Fresh California Squid, also known as Pusit to Filipinos and Calamari to much of the western world, is wild caught off the coast of California. Fresh California Squid is available in our stores almost year-round, as long as weather permits. California squid populations are high and plentiful, making it one of the best sustainable seafood options available. California squid is often small in size, but packs its own unique taste. It has a mildly sweet and slightly salty taste, with subtle hints of nuttiness. The color of raw fresh squid should be iridescent white with some light pink and purple accents. Cleaning squid can be done rather easily by rubbing the outer tube and removing the paper-thin layer of film encasing the squid. Fresh squid can be cooked and eaten whole, but make sure to remove the small piece of cartilage in the mantle (upper body) prior to consuming. Squid is one of the most versatile ingredients pairing well, yet remaining distinctive in the dishes that are being made. Fresh California Squid can be prepared and used in salads, soups, curries, and stir-frys.
